Cranberry Orange nut Bread

4 cups of flour
2 cups of sugar
3 Teaspoons of baking powder
2 Teaspoons of salt
1 Teaspoon on baking soda
1/2 cup butter
2 Teaspoons grated orange peel
1 1/2 cups orange juice
2 eggs, well beaten
4 cups or 1 package fresh whole cranberries, cut in half.
1 cup chopped pecans or sliced almonds
Sift dry ingredients and cut in butter with pastry blender or 2 knives. Combine peel, juice, and eggs and add to dry ingredients mixing just to moisten – using a wooden spoon. Fold in berries and nuts. Turn into 2 well greased 9x5x3 loaf pans(or 3 smaller ones). Bake at 350° about 1 hour. Check with toothpick. Should come out clean

Linguine With Carmelized onions, Bacon and olives
1 pound center cut bacon cut into 1/2 inch pieces
4 Tablespoons of olive oil
3 – 4 sweet onions cut into 1/4 inch strips

Carmelized onions
1 -2 cloves of garlic minced
1 2.25 ounce can of black olives
1 pound of linguine or angle hair pasta
Fresh ground pepper and Parmesan to taste.
Cook bacon in lg skillet. Remove and set aside. Drain grease saving about 4 Tablespoons. Add olive oil to pan and sliced onions. Saute on high about 10 minutes then reduce heat to med/low and cook for about another 20 minutes until onions are soft and edges are golden. Add garlic and saute about 1 minute. Return bacon to mixture and add olives cook for about 2 minutes. In a large bowl mix pasta and bacon mixture. Add bacon drippings as needed if pasta seems a little dry. Top with parsley, ground pepper and fresh Parmesan.

Hot 7 layer Dip
1 can of refried beans
8 ounces of cream cheese, softened or whipped
1 can of black beans drained and rinsed
4-5 dashes of Tabasco
1/2 – 3/4 cup of chunky salsa
8 ounces shredded Mexican blend cheese
8 ounces sour cream
1 small can of sliced olives
2 green onions diced
1 avocado diced
Pre heat oven to 350°
Mix refried beans, cream cheese and black beans together in a bowl. In a 9 x 13 baking dish layer the bean mixture and top with shredded cheese. Bake about 20 minutes until cheese is melted and some bubbling around the edges. Remove from oven and spread on sour cream and salsa. Sprinkle the olives, green onions and avocado over the top. Serve with Frito’s or tortilla chips.

1 cup semisweet chocolate chips
1 cup peanut butter chips
1 cup rice krispies
1/2 cup raisins
1/2 cup salted peanuts
In a microwave or heavy sauce pan, melt chocolate and peanut butter chips. Stirring until smooth. stir in cereal, raisins and peanuts. Drop by tablespoon on wax paper on a baking sheet. Refrigerate for 15 minutes or until st.
makes about 2 dozen

1 package of Parker House Rolls
1 pound ground beef
1 envelope of dry onion soup mix
1/4 cup water
1/2 cup of diced dill pickle or about 3 Tablespoons of dill relish
2-3 Tablespoons of Mustard
1 8 ounce package of shredded cheese. I like the casserole blend or Mexican blend
Brown ground beef and drain. Stir in dry onion soup mix and water. Cook about 5 minutes. Add mustard and shredded cheese, cook until cheese is melted. Slice rolls in half and spread beef mixture in the middle. Cook rolls in oven at 350° for 15 minutes

I have had this recipe for about 13 years. One of my closest friends Heidi Young gave it to me. When ever it is cold outside this is what I crave. Funny, that when she gave it to me we all lived in Hawaii! Hope you enjoy it as much as I do.
1 package of smoked sausage. I use turkey kielbasa or the smoked sausage
1 or 2 bunches of green onions thinly sliced
3 ribs of celery sliced
2 large cloves of garlic minced
1 cup of parsley chopped
1 Tablespoon of salt
Dash of red pepper
1 Tablespoon of Worcestershire sauce
1 Teaspoon of thyme
1 Teaspoon oregano
1 Teaspoon ground black pepper
1 Teaspoon Tabasco
2 cans of red beans
2 cans of stewed tomatoes
1 can of ro-tel tomatoes may be substituted for 1 can of stewed tomatoes
Slice sausage and start cooking in a large pot over low heat. Cook sausage for about 10 minutes. I add about two to three Tablespoons of water after a couple of minutes to de-glaze the pan. Add spices, onion, garlic, celery and remainder of flavourings. Stir till flavorings and sausage are blended. Add tomatoes and beans. Simmer for 1 hour with lid on. Stir approximately every7 15 min. Serve over rice.

Split Pea Soup
1 16 ounce package of dried green split peas, rinsed
1 meaty ham bone, or about 2 cups diced ham. With bone is always better as it adds more flavor
3 carrots, peeled and sliced. About 1 1/2 cups
1 cup chopped onion
2 ribs of celery chopped
2 teaspoons of minced garlic. About 2 cloves
1 bay leaf
1/4 cup fresh parsley, chopped
1 Tablespoon seasoned salt

Layered in Crock Pot
1/2 teaspoon fresh ground pepper
1 Tablespoon fresh thyme
4 cups of chicken broth. I like low sodium. You can always add salt to taste.
2 cups of water
Layer ingredients in Crock Pot in the order given. do not stir ingredients. Cover and cook on HIGH 8 to 10 hours until peas are very soft and ham falls off bone.
Remove bones and bay leaf. Mash peas to thicken more if desired. This freezes well.

1 box of Instant chocolate pudding
1 box of Instant french vanilla pudding
Make pudding per instructions on the box
1 9 ounce container of cool whip. Mix with pudding
1 box of graham crackers
1 can of chocolate frosting
In a 9×13 pan:
Layer 1 – graham crackers
Layer 2 – Pudding mixed with cool whip
Layer 3 – graham crackers
Layer 4 – Pudding mixture
Layer 5 – graham crackers
Freeze for 12 – 24 hours then spread frosting over top and serve.
